Easy Creamed Turkey Over Toast ~ Tasty Way to Use Leftover Turkey or Chicken

Thanksgiving isn't the only time of year that we eat turkey.  Turkey is an economical, tasty choice anytime of year.  We get the most mileage out of each turkey by using every last bit!

This recipe that I'm going to share with you is one of my favorite ways to use the last of the turkey.
This easy recipe is hearty and delicious!  If you don't have a turkey, you can substitute chicken (even canned chicken if you're in a really big hurry) and canned broth.  The recipe will still taste delicious!

1) Dice approximately 2 cups of turkey.
Collect the jelled broth.  I seem to always
come up with about 2 cups.

2) Whisk 2 cups of milk with 1/4 to 1/3 cup of flour.
Blend until all lumps are gone.

3) Melt jellied broth over medium heat in a heavy
stockpan or sauce pan.
Add salt and pepper to taste.  I start with 1 tsp of salt
and 1/4 tsp pepper.

4) Heat mixture over medium heat,
stirring often, until bubbly and thickened.

5) Add package of frozen mixed vegetables (approximately
2 cups) and diced turkey.
Continue cooking over medium heat until mixture is again
thick and bubbly. Be sure to stir often to
avoid sticking and burning.

6) Toast french bread (or bread of your choice)
under broiler.   Watch carefully to avoid burning.

7) Pour creamed turkey over toasted bread.
Serve with a salad for a delicious meal!
